I recently got a Roxio Game Capture HD and tried it out with Dead Space on my Xbox 360. I started a co-op campaign with Caleb from Hebanon Games. Unfortunately, I did not realize that by default, the Roxio does not capture game chat. That should be corrected soon. However, I did manage to get a few clips. Check em out!
